Hummus is a long-time favourite of ours, and the addition of roasted cauliflower and cashew nuts gives extra flavour and crunch!
Roasted Cauliflower, Hummus & Cashew Nuts
Simply top your favourite Stockan's Oatcake (we used our Thick variety) with roasted cauliflower*, sweet chilli hummus and roasted crushed cashews nuts. We garnished ours with a little fresh chilli and coriander too!
*(you can often find pre-made roasted cauliflower in the salad section of your local food store, alternatively you can roast your own - see the below recipe)
- 1/2 head cauliflower and slice
- generous drizzle of extra-virgin olive oil
- a good few grinds of salt and pepper
Preheat the oven to 220 degrees. Toss the cauliflower with the olive oil, salt and pepper. Roast until golden and tender, about 25 minutes.
Half a roasted cauliflower, one tub of hummus and a small packet of roasted cashew nuts will top approx six Stockan's Oatcakes.
