Our Wimbledon inspired toppings for this weekend's final.
The below toppings are quick, easy and no cooking required, and are perfect for picnics too!
From Left to right ~
- You can swap the cream for a low-fat crème fraiche, serves two.
- Crush three Stockan's Thick Oatcakes and divide into the bottom of two glass jars or bowls. Whip 150ml of double cream, add 1 x meringue nest crushed and 3 x large strawberries crushed into the cream, once mixed pour over the oatcakes. Garnish with an oatcake shard and a strawberry, serve immediately.
The Stockan's Cucumber Sandwich
- Top any of our oatcake varieties with garlic and herb cream cheese, we used Boursin, and layer with thinly sliced cucumber.
Smoked Salmon and Egg
To make this topping even easier, we bought pre boiled eggs!, served on our Mini Orkney Oatcakes
The Ploughman's Lunch
- Layer any of our wholegrain oatcakes with ham, cheddar, lettuce, tomatoes and pickle.
