Try this Japanese-inspired salmon yakitori oatcake idea using Orkney Mini Original Oatcakes. A simple, flavour-led recipe for sharing or light meals.

This recipe brings bold, familiar flavours together in a simple and approachable way. Inspired by Japanese-style yakitori, it pairs sweet and savoury teriyaki flavours with the crisp texture of Orkney Mini Original Oatcakes.

It’s a great example of how oatcakes can be used beyond traditional pairings – ideal for light lunches, sharing plates or entertaining with something a little different.

Ingredients

For the base

  • 1 pack Orkney Mini Original Oatcakes (Makes approx. 12 mini oatcake bites)

For the topping

  • 2 salmon fillets, cut into bite-sized pieces (or firm tofu, cubed, for a plant-based option)
  • 3-4 tbsp teriyaki sauce
  • Mixed salad leaves
  • 2 spring onions (scallions), finely sliced

Optional - Sesame seeds, to finish

Method

  • Marinate the salmon or tofu - Place the salmon pieces (or tofu) in a bowl and coat with the teriyaki sauce. Leave to marinate for around 15 minutes.
  • Cook the skewers - Thread the marinated salmon or tofu onto small skewers. Cook under a grill or in a hot pan for 6–8 minutes, turning occasionally, until cooked through and lightly glazed.
  • Prepare the base - Arrange the Orkney Mini Original Oatcakes on a serving plate. Add a small handful of salad leaves to each oatcake.
  • Assemble - Top each oatcake with a piece of salmon or tofu from the skewer. Sprinkle with sliced spring onions and a few sesame seeds if using.
  • Serve - Serve immediately while the topping is warm and the oatcakes remain crisp.

Why This Works

The light, crisp texture of Orkney Mini Original Oatcakes balances beautifully with the rich, sweet-savoury flavour of teriyaki-glazed salmon or tofu. Fresh salad and spring onions add contrast and keep the dish feeling fresh and well balanced. It’s a simple way to explore global flavour inspiration while keeping ingredients and preparation straightforward.
