Warm yourself up with this hearty soup recipe or relax and enjoy this delicious pickle. All you need to start is one large pumpkin and of course some oatcakes!

Hearty Pumpkin Soup

  • 750g pumpkin
  • 1 tbsp olive oil
  • 2 garlic cloves, (crushed)
  • ½ tpsp grated ginger
  • 2 medium potatoes (peeled & finely chopped)
  • 1 small onion (finely chopped)
  • 1 medium size carrot
  • 1 small chilli (deseeded and finely chopped)
  • 400ml vegetable stock
  • 4oz cream
  • Coriander leaves

Pop the garlic and onion into a pan with the olive oil and gently cook till onion softens. Transfer to a large pan with all the other ingredients and stock. Bring to the boil and then simmer for 20-30 minutes. Once cooked use a hand blender for a thick hearty soup and top with coriander leaves to serve.

Quick Pumpkin Pickle

  • 500g pumpkin
  • 2 apples
  • 2 apricots
  • A spoonful of raisins or sultanas
  • 1 small onion
  • 50g light brown sugar,
  • 100ml vinegar
  • Salt & pepper optional
  • If you want it a little bit spicy then add nutmeg, cinnamon and ginger

Put all the chopped fruit and vegetables in a pan with vinegar and sugar, bring to the boil and then simmer for 10-15 minutes. Drain off the excess liquid and once cool store in a sterilised jar.
