Indulge in Crunchy Cranachan with Orkney Thick and individual Mini Lemon Meringue Oatcakes

Crunchy CranachanIngredients & Method

  • 50g Stockan's Thick Oatcakes (crushed)
  • 300mls double cream
  • 3 tbsp good quality runny honey
  • 340g raspberries
  • 6 tbsp of your preferred drink . Tradition leans to whisky but vodka or cream liqueur are alternatives. For a non-alcoholic version a fruit smooth works just as well
  • Whip the double cream until it peaks
  • Fold in the honey, your drink of choice & the crushed oatcakes (but save some crushed oatcakes for the garnish)
  • Layer the cream mixture with raspberries in a glass dish, starting off with a layer of raspberries and finish with a layer of cream
  • Garnish with a few raspberries and the remaining crushed oatcakes

Mini Lemon Meringues

  • Simply spread lemon curd on Stockan's Mini Oatcakes
  • Top with a little torched meringue and add some mint leaves to decorate
